BEAN SOUP

2 cups beans 2 tablespoons finely cut onion 2 tablespoons finely cut bacon 1 teaspoon salt 1/8 teaspoon pepper 2 tablespoons chopped parsley 1 teaspoon thyme 3 tablespoons flour

Soak beans in water over night. Drain and put into saucepan with six cups boiling water and boil slowly two hours or until soft; add onion and bacon which have been fried light brown; boil five minutes; add salt, pepper, parsley and thyme. Mash beans with back of spoon. Add flour which has been mixed with a little cold water; boil five minutes and serve.

COCONUT SOUP

2 coconuts grated, 2 blades of mace, 1 salt spoonful of cinnamon, 3 pints of water, the juice of a lemon, 2 eggs, 1 oz. of Allinson fine wheatmeal, pepper and salt to taste.

Boil the coconut in the water, adding the mace, cinnamon, and seasoning. Let it cook gently for an hour; strain the mixture through a sieve and then return the soup to the saucepan.

Make a paste of the eggs, wheatmeal, and lemon juice, add it to the soup and let it boil up before serving; let it simmer for 5 minutes, and serve with a little plain boiled rice.

AUTUMN FRUIT SALAD

2 red delicious apples1 sliced bananas1 Granny Smith apple2 Bartlett pears1/2 pound red grapes1/2 cup almond slivers -- toasted1 cup vanilla yogurt1 teaspoon cinnamon1/4 teaspoon ground ginger1/2 teaspoon nutmeg1 tablespoon apple cider

Wash and core apples and pears, peeling if desired. Cut into oneinch chunks. Slice bananas 1/2" thick. Wash grapes and cut in half.

Combine fruits and almonds in salad bowl. Mix yogurt with spices and cider. Pour over fruit salad and stir to coat fruits evenly. Chill.

CHINESE CUCUMBER SALAD

3 cucumbers1 teaspoon salt3 tablespoons soy sauce2 quarts rice wine vinegar1 tablespoon sugar1 teaspoon sesame oil2 tablespoons scallions -- finely chopped1 tablespoon fresh ginger root -- finely chopped

Peel cucumbers. Slice thinly. Mix remaining ingredients and pourover cucumbers. Stir carefully. Chill.

CHEDDAR APPLE SMOKED TURKEY SANDWICH

1/4 Cup Hellmann's Dijonnaise Creamy Mustard Blend2 Tablespoons Honey8 Slices Seven-Grain Or Whole Wheat Bread4 Ounces Sliced Or 1 Cup Shredded Cheddar Cheese1/2 Pound Sliced Smoked Turkey Or Ham1 Apple, Cored And Thinly Sliced

In small bowl combine creamy mustard blend and honey; spread on one side of each slice of bread.

Layer cheese on 4 bread slices; top with turkey, apple and remaining bread. Cut sandwiches in half.

OPEN FACED HAWAIIAN SANDWICH

4 slices bread toasted4 slices pineapples, drainedMiracle Whip9-12 slices bacon, cooked & drained4 slices white American cheese

Spread toast with Miracle Whip. Put pineapple on top of that. Put cooked bacon on top of pineapple and put white American cheese. Slice on top of bacon. Put on cookie sheet and cook until cheese is melted. Bake at 350 degrees for 3-5minutes.
